CARBONARA

Bahan :
150g pasta,blanch al dente
as needed olive oil
10g garlic
10g onion
50g beef bacon
35g mushroom,slice
25g cream cooking
as needed parsley
1 btr egg yolk
20g parmesan

MOC 
1. panaskan pan with olive oil,add garlic,onion,dan beef bacon
2. saute mushroom,tambahkan creamcooking  juga pasta. aduk kembali
3.matikan kompor lalu masukkan egg yolk mix well
4.serve


BEEF WELINGTON

Bahan:
250g short ribs souvide
2pcs puff pastry
50g red wine sauce

Creamy spinach
spinach,blanch
garlic + onion
olive oil
cream cooking
salt
pepper
thyme and rosemarry
*heat olive oil,lalu saute garlic onion hingga harum. Masukkan cream cooking dan spinach beri salt and pepper to taste,aduk rata.Simmer beberapa menit hingga sdkt mengental. Angkat dan sisihkan

Muhroom duluxe :
mushroom champinon,slice and blanch
garlic + onion
olive oil
cream cooking
salt
pepper
thyme and rosemarry
*heat olive oil,lalu saute garlic onion hingga harum. Masukkan cream cooking dan mushroom beri salt and pepper to taste,aduk rata.Simmer beberapa menit hingga sdkt mengental. Angkat dan sisihkan


MOC
1.marinated beef with salt dan pepper,lalu roast didalam oven selama 8mnt dengan suhu 180celcius. Kemudian grill just mengambil warna saja
2.garnish dengan sauce lalu letakkan puff pastry-1 sebagai underliner lalu tuang diatasnya cream spinach dan mushroom
3.lapisan kedua tambahkan shortribs yg sdh dicut and tutup kembali dengan puff pastry
4.serve


SALMON COULIBIAC



Bahan :
150g salmon (marinated olive oil+thyme+rosemary)
60g   rice japan,cook
as needed garlic & onion
as needed olive oil
25g mushroom slice
as needed maple chips

MOC
1.grill salmon hingga kematangan welldone,angkat dan sisihkan
2.panaskan oil lalu saute garlic + onion kemudian mushroom. aduk rata kembali
3. jika aroma wangi :) lalu masukkan rice japan jangan lupa tambahkan cream. Mix well
4. Serve =
